Hot Corn Dip Recipe

This is our first recipe post! We thought it would be fun to change things up a bit and with BBQ season coming up and family gatherings underway who couldn’t use a great appetizer recipe. This one is also EASY and can be made ahead of time and just sit in the fridge until it’s time to bake. Here goes:
3 Cups of Corn, frozen or canned (2 cans)
1 can of minced Hatch green chiles*
8 ounces Cream Cheese, softened
1/3 Cup Mayonnaise
1 Cup Shredded Mozzarella
salt and pepper to taste
Combine the cream cheese and mayonnaise. Add the corn, chilies, mozzarella, salt and pepper and mix. Pour into a baking dish (I use a glass pie plate but a cake pan works great as well) and bake at 350 degrees for 30-40 minutes until the top is golden. Serve with tortilla chips and/or crackers.
*More heat can be added with hot sauce or jalapeno’s if you like your dip spicier. That’s what is great about this recipe is it can be catered to your taste.
